01 / ABOUT THE PLACE

About this place

Sushi here is gently formed with pockets of air so the vinegared rice grains yield softly the moment they touch the tongue. Located in a basement near Namikibashi, Sushi Yajima serves each piece the instant it is pressed, keeping pace with the chef's precise timing. The counter's greatest reward is eating without delay, enjoying the harmony of warmed, pleasantly acidic rice and fresh toppings in prime condition.

The omakase progression moves through seasonal seafood such as tuna, yellowtail, flounder, and striped jack, along with kuruma prawn, red clam, and round clam. Highlights vary in texture and warmth, ranging from tender, savory simmered sea eel and dashi-rich house tamagoyaki to a three-color roll wrapped in charcoal-toasted nori seaweed. Diners can also supplement their set with à la carte orders such as gizzard shad, mackerel, salmon roe, sea urchin, or fatty tuna at an additional charge.

To accompany the meal, chilled Hiraizumi sake from Akita Prefecture is available in servings from small glasses to carafes, its clean, refreshing profile cutting through the richness of fish and accentuating the sushi rice's vinegared bite. Because service moves briskly, a complete, deeply satisfying meal can easily be enjoyed even during a brief midday break. With limited seating and steady popularity, booking ahead is strongly recommended; note that payment is cash only.
